Cafe Rio was founded in 2009 by siblings Marco and Elena Vargas, who grew up watching their grandmother cook slow-roasted meats, hand-pressed tortillas, and vibrant salsas in a sun-drenched kitchen in southern Utah. They dreamed of sharing those memories with the world.
What started as a 12-seat lunch spot on 400 South has grown into a full-service restaurant beloved by locals, travelers, and food critics alike. Through every expansion, we've held onto one guiding principle: never compromise on flavor, freshness, or the feeling of home.
Today, Cafe Rio serves hundreds of guests daily, but every dish is still made with the same care and intention as day one — because we believe food is how we say "you matter."
